Pickled Cauliflower

If you're looking for a way to add some excitement to your meals, than pickled cauliflower is for you! Salty, tangy and crunchy, all the things you look for in a pickle. They are absolutely delicious and addictive and make for a healthy, refreshing snack.
Ingredients
- 
	
1 1/2 cups water
 - 
	
1/2 cup white vinegar
 - 
	
2 bay leaves- optional
 - 
	
2 tablespoons sea salt
 - 
	
1 large garlic clove, smashed
 - 
	
1 tablespoon granulated sugar
 - 
	
Cauliflower, roughly 500grams- cut into bite sized florets
 
Instructions
- 
	
In a pot, add the water, vinegar, salt and sugar. Heat up and stir continuously until the salt and sugar dissolve.

In a clean jar, stack the cauliflower florets until the jar is full.
 - 
	
Pour the water, vinegar, salt and sugar mixture into the jar, making sure all of the cauliflower is submerged in the vinegar mixture. Allow to cool.

When cool, seal the glass jar tightly and allow to sit for 5 days at room temperature in a cool dark place. Refrigerate afterwards and use within one month.
